Wine, one of humanity’s oldest and most celebrated beverages, reflects the complex interplay between environment, science, and craftsmanship. This seminar, Science of Wine, will decipher wine from grape to glass, highlighting the factors that shape its taste, aroma, and quality. Key influences include the growing environment—commonly known as terroir—as well as winemaking choices, maturation, and storage, all of which leave a lasting imprint on the final product. The seminar will also introduce the Systematic Approach to Tasting (SAT), developed by the Wine & Spirit Education Trust (WSET), which provides a scientific and structured framework for assessing wine. Through this method, participants will explore how sensory perception can be analyzed objectively, moving beyond subjective impressions to consistent evaluation. A practical demonstration will accompany the discussion, including an experiment comparing different wine glasses to illustrate how vessel design alters aroma and flavor perception. This hands-on element will connect theory to practice, underlying the scientific foundations of wine appreciation.
